Small herd, real cheese.
A PA-certified raw milk dairy in Coopersburg: small Jersey herd, on-site cheese-making, and a shop stocked from the same barn.
Certified, and small on purpose.
Pennsylvania is one of the few states where raw milk can legally be sold, and the certification is genuinely hard to keep. Flint Hill is a PA-certified raw milk dairy, and we also carry the PA Preferred designation, which covers products made and sold within Pennsylvania.
The herd is small by design: a handful of Jersey cows and a herd of dairy goats, including Noel, our Alpine goat. Milk becomes butter, yogurt, kefir, and cheese, all made on-site. Chèvre and manchego are among them.
From the milking stand to the rack.
Every wheel in the store started as a bucket of milk in this barn, on a morning like any other. This is the whole of it, in order: nine steps, one day's work, and then a year of waiting.
