The short version
Flint Hill Farm Educational Center is a nonprofit working dairy farm on 27 preserved acres in Coopersburg, Lehigh County, twenty minutes from Allentown and Bethlehem. The farm dates to about 1850. Kathleen Fields, a certified nurse-midwife, has run it since 1997: first as a dairy and, since 2006, as a 501(c)(3) educational center too.
Its mission is to bridge the gap between the urban and suburban community and the farm. School groups from pre-K through 8th grade, scout troops and homeschool co-ops come for field trips. Children spend summer weeks at farm camp. Adults take hands-on cheese making and bread baking classes and riding lessons, and volunteers and interns learn the farm's work.
The self-serve farm store sells raw and pasteurized milk from the farm's Jersey cows and dairy goats, with eggs, butter, yogurt and cheese made on the farm. Program fees cover about half of what it costs to run the farm; gifts cover the rest.

Story ideas
- Where food comes from. Most kids in Lehigh County have never touched a cow. For many of the children who visit, a school trip here is the first time food has had a face on it.
- A farm that can't be developed. Twenty-seven preserved acres between Allentown and Quakertown, run as a nonprofit.
- Make it yourself. Hands-on cheese making: chèvre and mozzarella in a morning, or cheddar over a full day, and you take home what you make.
